Deliciously Simple Vegetable Burgers


Hi Guys! This recipe is SO EASY & HEALTHY!

This veggie burger recipe is seriously so tasty! I have recently started cutting out meat & incorporating black beans into everything I eat! They are so versatile and I find their taste to be really similar to meat. This recipe is packed with healthy vegetables and with all the toppings added, it reminds me of eating a beef burger. I really love combining food to create different flavors.


1 425g can of chickpeas, drained and rinsed with cold water

1 cup cooked or canned black beans

1 tbsp minced garlic

1 cup frozen peas

1 cup frozen corn

1 cup breadcrumbs

1/4 cup minced purple onions

1/4 cup cilantro finely chopped

1/4 parsley finely chopped

1 tsp cumin

1 tsp paprika

pinch of salt


  1. Preheat oven to 350F
  2. Add all of the ingredients to a food processor and mix on low until well combined
  3. Shape burgers (1/2 cup) and place on a tray lined with silicone or baking paper
  4. Cook for 35- 40 minutes
  5. We used potato rolls & I topped our burgers with provolone cheese, lettuce, tomato, purple onions, mayonnaise, ketchup, mustard & Vegan Chipotle Fabanaise.  Use your favorite topping!! (Serves 7-8)

Hobby Lobby

Make some coffee and divulge in your own personal hobbies, together! For instance, I’ve been in the mood to organize and minimize my space for awhile now. My fiance enjoys playing guitar so we often hang out in the same room, enjoying our hobbies separately but still somewhat together. I request songs I want to hear while I’m cleaning and then he plays it for me. I think of it as a way to remain connected and involved in each other’s interests, even if you have some different hobbies.

How to Make Homemade Vanilla Extract with Vodka


My fiance and I are getting married in five months! We are extremely thrifty people who appreciate practical gifts. We are aware that some people give away gift bags after their wedding has ended as a thank you. In line with our own desires to experiment with making homemade vanilla extract, we decided to bottle up some of our fun and make our guests homemade vanilla extract instead of a gift bag.


80 Proof Vodka

3 Vanilla Beans per 8 oz of Vodka

This recipe is so easy and people will be touched that you put in the (seemingly simple) time and effort!


1. Cut Beans in half lengthwise and split open, revealing the beans inside.

2. Place the beans into the vodka container and close, making sure the container is air tight.

3. Place in dark area and shake every so often. The longer the beans sit in the vodka, the better the vanilla extract will be!

I plan to allow the vanilla beans to sit for five months before placing the vanilla extract into individual bottles. You do not have to wait even half as long! I’ve used the extract within one month of letting the beans soak when I realized I didn’t have any vanilla for a recipe I was working on and it worked perfectly!
