I’ve been experimenting with food a lot lately. For dinner tonight, I created this simple recipe for those of you that enjoy the practicality of using Crock-Pot Slow Cookers! It turned out very well and is actually a little healthier than traditional mac & cheese. I hope you enjoy it as much as my fiancé and I did!

Ingredients
10 ounces evaporated milk
2 1/2 cups organic unsweetened almond milk
1/2 teaspoon paprika
1 teaspoon kosher salt
3-5 dashes Franks Red Hot Sauce
¼ cup butter, cubed
4 ounces longhorn chedder, grated
6 ounces mild cheddar cheese, grated
3 ounces colby jack cheese, grated
14 oz uncooked rotini veggie pasta

Directions

  1. Whisk together almond milk, evaporated milk, Franks Red Hot Sauce, salt, and paprika in Crock-Pot® Slow Cooker.
  2. Pour the uncooked rotini pasta into your Crock-Pot Slow Cooker. Top with cubed butter and all cheeses.
  3. Stir to combine. I waited until the dish heated up because it was easier to stir without the pasta breaking.
  4. Cover your Crock-Pot Slow Cooker and cook on low for 2-2.5 hours, stirring once or twice an hour.
  Serves 4-6 people

Deliciously Simple Vegetable Burgers

Hi Guys! This recipe is SO EASY & HEALTHY!

This veggie burger recipe is seriously so tasty! I have recently started cutting out meat & incorporating black beans into everything I eat! They are so versatile and I find their taste to be really similar to meat. This recipe is packed with healthy vegetables and with all the toppings added, it reminds me of eating a beef burger. I really love combining food to create different flavors.

Ingredients

1 425g can of chickpeas, drained and rinsed with cold water

1 cup cooked or canned black beans

1 tbsp minced garlic

1 cup frozen peas

1 cup frozen corn

1 cup breadcrumbs

1/4 cup minced purple onions

1/4 cup cilantro finely chopped

1/4 parsley finely chopped

1 tsp cumin

1 tsp paprika

pinch of salt

Directions

  1. Preheat oven to 350F
  2. Add all of the ingredients to a food processor and mix on low until well combined
  3. Shape burgers (1/2 cup) and place on a tray lined with silicone or baking paper
  4. Cook for 35- 40 minutes
  5. We used potato rolls & I topped our burgers with provolone cheese, lettuce, tomato, purple onions, mayonnaise, ketchup, mustard & Vegan Chipotle Fabanaise.  Use your favorite topping!! (Serves 7-8)
